Medallions of Sweet Potato SpinachBake a sweet potato until it’s just tender (don’t overcook or it will be mushy). Slice into medallions about 1/3” thick and place a few on a bed of freshly steamed spinach. Drizzle with our Toasted Sesame Dressing. Optional: Garnish with a fan of 4 or 5 pieces of thinly sliced red pepper. (This is delicious served beside a good, homemade macaroni and cheese.)

Grilled Veggies with Tofu or ChickenPlace in a large bowl, pour on our Toasted Sesame Dressing and mix so that everything is completely coated. Place on a hot grill and cook. Asparagus, onion rings, eggplant, peppers, summer squashes; it goes with everything. (Veggies and tofu don’t take long – make sure to cook chicken thoroughly.)
